Chocolate Meringue Pie

Mostly, I’ve written on this blog about the natural, healthy, wholesome food that my family loves to eat.

However, we’re not that dedicated to being food purists.

We love an occasional treat. One thing that I love to make is PIE!

I love pie. Love it so much. Pie of any kind is just amazing. I was so not into the whole cupcake trend that went around a few years ago, because pie is just so much better.

Here is a pie that is not unusual in our house. Chocolate Meringue Pie is cool, smooth, and sweet.

Chocolate Meringue Pie

1 9 inch pie-crust baked according to instructions and cooled

¾ cup sugar
¼ cup cornstarch
¼ teaspoon salt
3 cups milk
4 egg yolks, beaten
4 tablespoons butter
2 teaspoons vanilla
6 tablespoons cocoa

4 egg whites
¼ teaspoon cream of tartar
½ teaspoon vanilla
¼ cup sugar

In a medium saucepan, stir together sugar, cornstarch and salt.  Whisk in milk until smooth.  Cook over medium heat until mixture boils, constantly stirring, to avoid scorching.  Boil for 2 minutes or until mixture becomes very thick.  Remove from heat.    Stir ½ cup of mixture from pot into the egg yolks.  Blend completely and return the egg-yolk mixture to the pot, completely incorporating it into the remainder of the mixture.  Return the pot to the stove and return the mixture to a boil, always stirring.   Remove from heat.  Add vanilla,  butter and cocoa.  Stir thoroughly.   Pour into baked shell.

Preheat the oven to broil. Allow egg whites to warm to room temperature. In a large, deep bowl, using an electric mixer, combine egg whites, vanilla and cream of tartar.  .  Beat at medium speed until soft peaks form.  Add sugar 1 tablespoon at a time, beating on high speed until stiff peaks form and the sugar is completely dissolved.  Spread meringue on top of the filling to the edges of the crust, sealing well.  Place the pie on a cookie sheet for easy removal and place in the oven.  Do not leave it unattended!!! This meringue browns extremely quickly.   If it browns unevenly, give it a half turn.  The browning should take less than five minutes.  Remove from oven when it is a golden brown color.  Chill for 2-3 hours.
