What to Do When You’re Snowed In…(Molasses Cookies)

If the weather continues to be snowy and icy, we are going to weigh about 500 pounds. My daughters are complaining “There’s nothing to do but cook and eat.” And they are right. So why not?

Molasses cookies are one of our winter favorites. They are chewy and cinnamony…yum. So if you’re stuck inside, why not whip up a batch of these tasty treats?

Molasses Cookies

Ingredients:

  • 3/4 cup softened butter
  • Molasses Cookies1 cup sugar
  • 1 egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/4 cup sugar mixed with 3 teaspoons cinnamon, stirred together in a small bowl for topping

Cream together the butter and sugar until light and fluffy. Add the molasses, egg, and vanilla. Thoroughly combine the dough, beating it for 2 minutes. Add the flour, baking soda, salt, and cinnamon. Stir well. Refrigerate the dough for about an hour. Preheat oven to 350. Scoop out walnut-sized balls and roll them in the cinnamon-sugar mixture. Place on ungreased baking sheets about 2 inches apart. Bake for about 10 minutes or just until set. The cookies will still be quite soft, so allow them to sit on the pan for about 10 minutes before scraping them off with a spatula to complete cooling on a rack. Store tightly covered.
