Lemon Cake Mix Bars

While I love cooking from scratch most of the time, there are times when I use shortcuts.

Nope.

I’m not such a snob that you will never find a cake mix or muffin packet lurking in my pantry.

This recipe uses a shortcut that will help you whip up a snack for your family in no time. If you need something quick and easy to give your family a treat or you need something to bring to a church potluck, this is a simple one to throw together. The secret ingredient is a lemon flavored cake mix. Any brand will do.

Lemon Cake Mix Snack Bars

1 box lemon cake mix

2 eggs

½ cup cooking oil

1 cup white chocolate chips

Preheat your oven to 350 degrees and lightly spray an 8 inch baking pan with cooking spray.

In a medium sized mixing bowl, stir together the cake mix, the eggs, and the cooking oil until you have a soft batter. I use a wooden spoon. I don’t even bother getting out the electric mixer. It should be about the same texture as a brownie mix.

Stir in your white chocolate chips.

Scrape the batter into the prepared pan and smooth it into an even layer.

Put the pan in the oven and bake it for 20 to 25 minutes, or until it is lightly browned on top.

Remove the pan from the oven and let them cool for about an hour. If you cut these snacks too early, they get very crumbly. They need to set up for a bit before you try to slice them.

Cut into bars and serve.
