Southern Fried Tilapia

Seafood is pricey these days. We have a family of five right now, so I really like using tilapia. This mildly flavored fish is tasty and low in fat. It’s also high in protein.

I do love frying tilapia. This is an easy way to whip up a yummy dinner. Tilapia cooks quickly and the crust is amazing!

4-6 tilapia filets, thawed

3/4 cup cornmeal

1/2 teaspoon salt

1/2 teaspoon pepper

Cooking oil

Into large cast iron skillet, pour enough oil to cover the bottom. Heat the pan over medium heat until the oil is shimmering and runny.

As the oil heats, stir together the cornmeal with the salt and pepper on a large dinner plate.

Roll the fish filets in the cornmeal mixture, coating them all over with the cornmeal.

Place the filets in the hot oil. Let them cook until they are lightly browned around the edges and crusty. With a spatula, flip the filets to cook the backside.

When the fish is golden brown on both sides, remove to a paper towel lined plate to drain. Serve the fish piping hot.
